It always blows my mind when people call Salads BORING…..
My question to them is……
WHO’S BEEN MAKING YOUR SALADS??
A salad is meant to be bright vibrant full of nutrient dense foods….
Full of fiber and protein….
Full of flavour….
I LOVE SALADS, and sometimes, My salad doesn’t even have lettuce in it:)
WHAT YOU NEED:
1/2 C dry Quinoa (red or white)
1 C Water
1Tbsp freshly chopped Parsley
1Tbsp Chopped Walnuts
1tsp Fresh Lemon Juice
1tsp Balsamic Vinegar
1tsp Olive Oil
1/2C Black Beans (could also use Chic Peas)
1- Prepare your Quinoa according to the instructions ( Boil 1 cup Water, add quinoa, bring to a boil again, reduce, cover for 5-15 minutes, depending on red or white Quinoa, fluff with fork when done)
2- Place cooked quinoa in bowl, and add beans
3- Mix your Oil, Vinegar and lemon juice together and drizzle over mixture. MIX WELL
4- Add your parsley and enjoy
