BodyRipped Banana Ice Cream Cookie Sandwhich

 OOPS….. I did it again;)

I Made a Tasty:)

It’s RAW and COULD be Vegan ….. but this particular recipe is NOT Vegan…. just healthy yummy and RAW!

COOKIE: * requires a food processor

1C raw cashews

2C pitted dates

1 tsp Vanilla

******************** HOW DOES THIS MAKE A COOKIE??**********

1- Cashews go in first, blend them up

2-Add in dates slowly, blend

3-Add in vanilla

4-Roll dough out  THINLY on your chosen flat surface and set aside to chill ( Refrigerate)

 

BANANA ICE CREAM FILLING: Food processor or high-speed blender requred

1 large frozen banana

250g 1% Cottage Cheese ( You could also use Greek Yogurt but the flavor would be slightly different)

2 packets Stevia

1tsp Vanilla pudding powder

(Wanna make this baby vegan???? Omit the dairy and blend up 2 frozen banana’s with stevia and vanilla until smooth)

*********************HOW DOES THIS MAKE ICE CREAM???****************

1-Blend all ingredients together until completely smooth.

2-Place the ice cream in a zip loc bag or sealed Tupperware container and place in freezer for 1-3 hours or until almost frozen ( If this gets completely solid, you lose the ability to form your sandwiches and its very hard to eat)

3-Remove your cookie dough from the fridge and cut out your cookies using either a cup or a cookie cutter ( I used a tall glass:)

4- Take one cookie, nice side down,place 1 heaping Tbsp of perfectly frozen ice cream in the center and place your second cookie on top.

5- Allow to freeze again for about 45-60 minutes and enjoy!!!!!

*Technically you could just go atter from step 5, but its nice to have the cookie freeze together…. In my opinion anyway.
